Butternut Squash Preparation



  1. Using a vegetable peeler, peel the outer skin from the butternut squash.
  2. Once peeled, cut of the top and bottom of the squash.
  3. Cut the squash in half. 
  4. Using a spoon, scoop out the seeds.
  5. Cut the halves again, separating the narrow top, from the rounded bottom, to make it easier to cube.
  6. Lay the flat side down and slice each section into long strips about 1 inch wide.
  7. Turn the squash and cut into about 1 inch cubes.  You may need to cut some pieces again (the bottom of the squash) after this cut.
