Randy's Scottish Shortbread Intro

This version of shortbread is buttery and melts in your mouth. It goes well with tea, coffee or just as a snack at night.

Makes about 2 Dozen Cookies

The Ingredients

1 Cup butter
2 Cups sifted all-purpose flour
3/4 Cup confectioners’ sugar
1/3 Teaspoon salt

Preparation and Cooking Instructions

Sift the dry ingredients together. Blend the dry ingredients into the butter until all of the ingredients are well mixed. Pat the stiff dough onto an ungreased cookie pan and press down the edges until the dough is about ¼” thick. I use a scraper to flatten the dough. Pierce with a fork through the dough every half-inch and then using the scraper I score lines between the fork marks making rectangles. Bake for 25 to 30 minutes. Cut into rectangles while still warm and move to a cooling rack.
