This is another recipe that I got from my Dad. He loved all types of pasta and pizza but really enjoyed this sauce. This sauce is rich and spicy - but so simple and quick to make. We typically serve it with penne, but have also served it with other thicker pastas and well as gnocchi.

2 tablespoons butter
1/3 cup Vodka
½ teaspoon of red pepper flakes
1 cup canned tomatoes
1/2 teaspoon salt
½ cup heavy cream
¼ cup freshly grated Parmesan cheese
Penne or other Pasta
Penne (or other Pasta)
Put a large pot of water on the stove and add about a half teaspoon of salt. Turn on high heat until it begins to boil. You can cook the pasta as you prepare the sauce or wait until the sauce is done, just do not cook it too soon! When you are about half way through cooking the sauce, cook the pasta according to the directions on its packaging. We prefer to prepare it al dente!
Vodka Sauce
Heat 2 tablespoons butter in a large skillet over medium-low heat. Stir in 1/3 cup Vodka and 1/4 to 1/2 teaspoon of red pepper flakes (depending on the level of spice you like); heat gently for about 2 minutes. Add one cup canned tomatoes (whole or crushed - and we have also used fresh tomatoes) and 1/2 teaspoon salt; cook over high heat, stirring to break up tomatoes if whole/fresh, until it thickens a bit, about 5 minutes. Stir in ½ cup heavy cream; cook until thick, about 5 minutes more. Stir in ¼ cup freshly grated Parmesan cheese.
Spoon on top of the penne. Add parsley or basil for garnish - if desired.
